WHY KIDS HATE BROCCOLI AND CAULIFLOWER
A new study claims there’s a scientific explanation for why kids dislike broccoli and cauliflower. A team in Australia says it’s because of the saliva of children. Bacteria in the mouth can mix with certain enzymes in these veggies, producing an unpleasant and sulfurous odor. Broccoli and cauliflower contain a compound called s-methyl-l-cysteine sulfoxide. It produces a potent smell when it interacts with the same enzyme coming from bacteria in a person’s saliva. Children with higher levels of these volatile compounds in their saliva causes them to dislike broccoli, cauliflower, and other similar vegetables.
