U.S. BACON RESERVES RUNNING LOW
Reserves of pork belly, the fatty cut of the pig that is typically turned into bacon, was down to 17.8 million pounds in December – the lowest reserve since 1957, according to the U.S. Department of Agriculture. Bacon is so popular that pig farmers are scrambling to keep up with demand, according to the Ohio Pork Council. They say that even though pig farmers are setting historic records by producing more pigs than ever, our reserves are depleting. The shortage has also caused pork belly prices to shoot up by 20 percent in January, the pig council said, although they say, “Bacon may become more expensive for consumers, [but] rest assured, [the] pork industry will not run out of supply.”
